Breakfast anyone? YUM! So the past couple of weeks I have been totally obsessed with Zucchini. From zoodles to fritters, zucchini (or courgette! I say both haha) is such a versatile vege – you can even use it in baking.
Since I was a kid I have always loved fritters, I’ve got fond memories of corn fritters being the one thing Mum wouldn’t burn (hahahaha sorry Mum, I couldn’t take another “Suzy Surprise!”) and my Nana making random fritters out of leftovers when I was hungry. Lets just say I think fritters are a good thing. Especially when I can use them to sneak more vegetables into my day, I am the absolute worst when it comes to not eating enough green stuff.
This recipe proved so popular over on the Facebook that I figured it was probably time to dedicate a section on my website to it. Not only is it delicious, but it also takes about five minutes to whip up. Without any further rambling, here it is folks:
