PALEO/GLUTEN FREE/DAIRY FREE/REFINED SUGAR FREE/
S’mores have been a trend online forever, but since the traditional variety is packed with sugar, gluten AND dairy, I knew there was a gap for a wholefood alternative.
I do fancy a challenge in the kitchen and whilst most of my recipes are predominantly simple, I figured I could branch out and do something that involved a couple more components than usual. Although, in saying this, this recipe is still stupid easy too!
So – chocolate mousse, marshmallow fluff and crispy ‘graham cracker’ style crumbles? What could be better? Very little.
This is more of a treat recipe, but my keto friends could surely make this keto friendly by swapping out the maple syrup for a natural no carb sweetener such as erythritol. You may want to figure out how to powder it for this however, as I would imagine it could get quite gritty. You will also need a hand mixer or stand mixer for this recipe for the marshmallow fluff, otherwise your arm will be getting quite the workout!
My recipe tester on this one was my faithful best friend Vanessa, who loved it! The biscuit brings a crunch into an otherwise soft and silky dessert and is totally delicious.
