Slow cooked meals are always such a treat! I love how easy they are and that they can be easily thrown together and essentially left to their own device for most of the day. The end result? A delicious, melt in your mouth meal that often utilises cheaper cuts of meat.
This is a lamb ragu and whilst lamb isn’t necessarily a cheaper cut of meat by any means, you could easily sub the lamb for beef if you had a budget to keep in mind. This one is a great winter meal for the family or you could portion it out for meal prep and freeze it for emergency meals too.
Diverse, delicious and nutrient dense – just the way I like it! I love to serve this with a cauliflower mash. You can find the recipe here.
I make this in a slow cooker, however I’m sure you could do it in a casserole dish in the oven too. I think the cooking time would vary and be quite a lot shorter however.
