We all know by now that salad can get pretty boring. I’m personally a creature of habit and once I find something I love, I often repeat that until I find something new to love. Then when I rediscover an old favourite, it’s a love affair all over again.
I like eating my favourite things as much as I love trying new things and when creating 28 Days of Recipes, the overwhelming request from you guys was a variety in lunch friendly meals. I know lunch can be tough which is why I have provided make in advance meals as well as quick and easy salads. Trust me – I’ve been there and know what does and doesn’t work!
This salad is fresh and crisp with a sweet hit from the apple which complements the soft chicken with mayo and the crunch of the walnuts. It’s super easy to prepare and delicious to eat.

Servings | people |
- 2 chicken breasts
- 1/4 cup walnuts
- 1 green apple core removed
- 2 cups lettuce
- 1/4 tsp Salt
- 3 tbsp mayonnaise homemade is best

- Begin by bringing a medium pot of water to the boil over a high heat. Add your chicken breasts and poach until cooked through: around 20 minutes.
- Take chicken out and use two forks to shred. Let cool for 10 minutes.
- Meanwhile, shred your lettuce and place into two bowls for service.
- Dice your apple into even chunks and place into a bowl with your walnuts, chicken, salt and mayo.
- Top your lettuce with your chicken mixture and serve!
